I must thank you for all of the birthday and Mother’s Day cards I received. The refrigerator doors and walls are full of cards of best wishes. AND I want to thank each and every one of you for your thoughtfulness. I’d like to write all of the messages I received but the Lake Region Life newspapers would be too heavy to mail! One which really expressed my feelings had the message “As time goes by, we begin to learn what matters. Years don’t matter, distance doesn’t matter, FAMILY and Friends matter. We share a bond of memories, of laughter, of love, and on your birthday, I just want you to know, you matter to me, and always will. Wishing you good health and fun times in the years ahead and forever.”

It’s so much fun watching the cars go by and the dogs hanging their heads, and tongues, out the windows trying to capture the nice cool breezes. They must be strapped into the seats, or I’m sure some of them would jump out. One person I know has a dog who barks when he (or she) sees me when the car goes by my house. It’s fun to watch for them. It’s also nice to see many cars with the tops open to capture the summer breezes.

Tempus fugits (time flies) and the summer holidays are here. The resorts are beginning to look alive again with all of the tourists coming back from their winter homes in the south. It’s nice to see the town bustling and the stores being filled with customers.

Did you ever notice that when you smile at a person, they usually return the smile or say “hello”? I found the following ditty in one of my magazines and thought it was worth repeating: The price of a Smile: A smile costs nothing but gives much. It enriches those who receive without making poorer those who gave. It takes but a moment but the memory sometimes lasts forever. No one is so rich or mighty that he can get along without it, and no one is so poor that he can be rich by it. A smile creates happiness in the home, fosters good will in business, and is the countersign of friendship. It brings rest to the weary, cheer to the discouraged, sunshine to the sad, and is natures best antidote for trouble. Yet it cannot be bought or stolen, for it is something that is of no value to anyone until it is given away.

Some people are too tired to give a smile. Give them one of yours, as no one needs a smile so much as he who has none to give.

Now for some delicious rhubarb recipes as the plant is in abundance right now.

Rhubarb Dessert

2 cups flour

2 T. sugar

1 cup butter

Mix butter, flour and sugar together. Pat out in an oblong pan to form crust. Bake 15 to 20 minutes at 370 degrees until golden brown.

Filling: 3 cups rhubarb, ½ cup cream, 1-1/2 cups sugar. 3 egg yolks, beaten. Juice and rind of one orange. 2 T. flour.

Place sugar and flour in heavy saucepan. Add rhubarb, cream and orange juice. Cook until rhubarb is done and moisture thick. Add to egg yolks and return to heat. Top with meringue made from well beaten egg whites and sugar. Bake at 350 degrees until meringue is golden brown. MERINGUE: 3 egg whites and 6 T. sugar. Enjoy!

One Crust Rhubarb Pie

1 egg slightly beaten

1 cup sugar

3 T. flour

½ cup water

1 T. butter

3 cups rhubarb, cut into ½” pieces

One unbaked pastry shell

Mix egg, sugar, flour and butter and let stand a few minutes. Pour the mix over the rhubarb in the shell. Bake at 375 degrees for 45 minutes. YUMMY!
